gluten-free spice cake

A delicious and moist gluten-free spice cake, perfect for any occasion. This recipe uses almond flour for a naturally gluten-free base.

  • 1.5 cups almond flour
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1 tsp ground cinnamon
  • 0.5 tsp ground cloves
  • 0.5 tsp ground nutmeg
  • 0.75 cups granulated sugar
  • 0.5 cups brown sugar
  • 0.5 cup unsalted butter, softened
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 cup milk

Preparation Steps

  • Preheat oven to 350°F (175°C). Grease and flour a 9x13 inch baking pan.
  • In a large bowl, whisk together almond flour, baking soda, baking powder, cinnamon, cloves, and nutmeg.
  • In a separate bowl, cream together the sugars and butter until light and fluffy. Beat in eggs one at a time, then stir in vanilla.
  • Gradually add the dry ingredients to the wet ingredients, alternating with the milk, beginning and ending with the dry ingredients. Mix until just combined.
  • Pour batter into the prepared pan and bake for 30-35 minutes, or until a wooden skewer inserted into the center comes out clean.
  • Let cool completely before frosting.

Notes

For a richer flavor, use browned butter. You can also add nuts or chocolate chips to the batter.
