gluten-free all-purpose flour blend
Use a blend that contains xanthan gum.

powdered sugar

unsalted butter
Cold, cut into cubes

Instructions
Preparation Steps
Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
In a large bowl, whisk together the flour and powdered sugar.
Cut in the cold butter using a pastry blender or your fingers until the mixture resembles coarse crumbs.
Stir in the vanilla extract.
Form the dough into a disc, wrap in plastic wrap, and chill for at least 30 minutes.
Roll out the dough on a lightly floured surface to about 1/4 inch thickness. Use cookie cutters to cut out shapes.
Place cookies on the prepared baking sheet and bake for 12-15 minutes, or until lightly golden.
Let cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
Notes
Store cookies in an airtight container at room temperature for up to 3 days.
