Gluten-Free Pumpkin Bars

Delicious and moist gluten-free pumpkin bars, perfect for fall. Easy to make and guaranteed to be a crowd-pleaser!

  • 1.5 cups gluten-free all-purpose flour blend
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1 tsp ground cinnamon
  • 0.5 tsp ground nutmeg
  • 0.5 tsp salt
  • 1 cup pumpkin puree
  • 1 cup granulated sugar
  • 0.5 cup packed brown sugar
  • 0.5 cup vegetable oil
  • 2 large eggs
  • 1 tsp vanilla extract

Preparation Steps

  • Preheat oven to 350°F (175°C). Grease and flour a 9x13 inch baking pan.
  • In a large bowl, whisk together gluten-free flour, baking soda, baking powder, cinnamon, nutmeg, and salt.
  • In a separate bowl, combine pumpkin puree, granulated sugar, brown sugar, oil, eggs, and vanilla extract. Mix well.
  • Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
  • Pour batter into the prepared pan and spread evenly.
  • Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
  • Let cool completely before cutting into bars.

Notes

These bars are best stored in an airtight container at room temperature for up to 3 days.
