  • 4 cups gluten-free flour blend plus extra for dusting
  • 2 teaspoons xanthan gum omit if your flour blend contains it
  • 4 teaspoons baking powder
  • 2 teaspoons kosher salt
  • 3 cups plain nonfat Greek yogurt
  • 0.5 cups lukewarm water plus more as needed
  • 1.5 cups tomato sauce homemade or store-bought
  • 4 ounces miniature pepperoni slices optional
  • 12 ounces low-moisture mozzarella cheese shredded
  • 4 ounces Parmigiano-Reggiano cheese finely grated
  • 1 large egg
  • 1 tablespoon water

Preparation Steps

  • Preheat the oven to 400°F (200°C) and grease two 12-cup muffin tins.
  • In a large bowl, whisk together gluten-free flour, xanthan gum, baking powder, and salt.
  • Add Greek yogurt and ¼ cup lukewarm water. Mix until a dough forms, adding more water if needed.
  • Divide the dough in half. Keep one half covered while working with the other.
  • On a floured surface, roll the dough into a 10x16 inch rectangle.
  • Spread half the tomato sauce, pepperoni, mozzarella, and Parmigiano-Reggiano over the dough.
  • Roll the dough tightly from the short end and slice into 12 portions.
  • Place each pinwheel in muffin tin cups, cut-side up.
  • In a small bowl, whisk the egg and water together to make an egg wash.
  • Brush pinwheels with egg wash.
  • Bake for 20-25 minutes until golden brown.
  • Allow to cool slightly before serving with extra tomato sauce.
