  • 2 large Eggs
  • 0.25 cup Lemon Juice freshly squeezed
  • 1 tablespoon Lemon Zest
  • 1 teaspoon Vanilla Extract
  • 0.5 teaspoon Baking Powder
  • 0.25 teaspoon Salt

Preparation Steps

  • Preheat oven to 350°F (175°C) and grease and flour an 8x8 inch baking pan.
  • In a large bowl, whisk together the gluten-free flour, sugar, baking powder, and salt.
  • In a separate bowl, whisk together the melted butter, eggs, lemon juice, lemon zest, and vanilla extract.
  • Pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix.
  • Pour the batter into the prepared baking pan and bake for 25-30 minutes, or until a toothpick inserted into the center comes out with moist crumbs.
  • Let the brownies cool completely in the pan before cutting and serving.

Notes

These brownies are best served chilled. You can also dust them with powdered sugar for an extra touch.
