Preparation Steps
In a large bowl, whisk together the gluten-free flour, sugar, baking powder, and salt.
Cut in the cold butter using a pastry blender or your fingers until the mixture resembles coarse crumbs.
Add the milk and vanilla extract and mix until a dough forms.
Wrap the dough in plastic wrap and chill for at least 30 minutes.
Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
On a lightly floured surface, roll out the dough to about 0.25 inch thickness. Use animal cookie cutters to cut out shapes.
Place the cookies on the prepared baking sheet and bake for 10-12 minutes, or until lightly golden brown.
Let cool completely on the baking sheet before serving.
