  • 0.25 cup Unsalted Butter Cold, cut into cubes
  • 0.25 cup Milk
  • 1 teaspoon Vanilla Extract
  • 0.5 teaspoon Baking Powder
  • 0.25 teaspoon Salt

Preparation Steps

  • In a large bowl, whisk together the gluten-free flour, sugar, baking powder, and salt.
  • Cut in the cold butter using a pastry blender or your fingers until the mixture resembles coarse crumbs.
  • Add the milk and vanilla extract and mix until a dough forms.
  • Wrap the dough in plastic wrap and chill for at least 30 minutes.
  • Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
  • On a lightly floured surface, roll out the dough to about 0.25 inch thickness. Use animal cookie cutters to cut out shapes.
  • Place the cookies on the prepared baking sheet and bake for 10-12 minutes, or until lightly golden brown.
  • Let cool completely on the baking sheet before serving.
