Pat the steak bites dry with paper towels. Season generously with salt and black pepper.
Heat olive oil in a large skillet over medium-high heat until shimmering.
Add the steak bites to the hot skillet in a single layer (cook in batches if necessary to avoid overcrowding). Sear for 1-2 minutes per side, until browned and cooked to your desired doneness.
Remove steak bites from the skillet and set aside.
Reduce heat to medium. Add butter to the skillet. Once melted, add minced garlic and cook for about 1 minute until fragrant, being careful not to burn it.
Return the steak bites to the skillet and toss to coat them in the garlic butter sauce. Cook for another minute.
Garnish with fresh chopped parsley and serve immediately.
