French Onion Soup

Ingredients
- 6 yellow onions thinly sliced
- 3 tablespoons butter
- 1 tablespoon olive oil
- 1 teaspoon kosher salt
- 1 teaspoon sugar
- 3 cloves garlic minced
- 1/3 cup dry white wine
- 6 cups beef broth
- 2 sprigs fresh thyme
- 1 bay leaf
- 1/2 teaspoon black pepper freshly ground
- 6 slices French bread toasted
- 1 1/2 cups Gruyere cheese shredded
Instructions
Melt the butter with the olive oil in a heavy pot over medium heat. Add onions, salt, and sugar.
Cook the onions slowly for 35 to 45 minutes, stirring often, until deeply golden and soft.
Add garlic and cook for 1 minute. Pour in wine and scrape up any browned bits.
Add broth, thyme, bay leaf, and pepper. Simmer uncovered for 25 minutes, then remove herbs.
Ladle soup into ovenproof bowls, top each with toast and Gruyere, and broil until bubbling and browned.
