  • 5 cups uncooked rotini pasta cook according to package instructions
  • 2 cups sour cream
  • 2 cups salsa
  • 2 packets mild taco seasoning
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 2 cans corn drained, 15 oz each
  • 2 cans black beans drained and rinsed, 15 oz each
  • 5 cups cooked chicken cubed
  • 4 cups shredded cheese use any preferred cheese like Colby Jack or Cheddar

Preparation Steps

  • Preheat the oven to 350°F. Prepare a 9x13 baking dish by spraying it with cooking spray and set aside.
  • Cook the rotini pasta to al dente according to package directions. Don't forget to add a teaspoon of salt to the boiling water.
  • In a large mixing bowl, combine sour cream, salsa, taco seasoning, cumin, garlic powder, and onion powder.
  • Drain the pasta and add it to the sour cream mixture, stirring to combine thoroughly.
  • Add the corn, black beans, cooked chicken, and half the shredded cheese to the pasta mixture. Stir to combine well.
  • Transfer the mixture into the prepared baking dish and sprinkle the remaining cheese on top.
  • Cover the dish with foil and bake for 25 minutes. Remove the foil and bake for an additional 5 minutes.
  • Optional: Garnish with sour cream, chopped tomatoes, cilantro, and avocado slices before serving.

Notes

For a spicier kick, include diced green chilies or a spicier salsa in the ingredients. Leftovers can be stored in the fridge for up to 4 days.
