  • 36 rolls Mini brioche buns
  • 5 lbs Beef brisket Trim excess fat
  • 0.5 cup Yellow mustard For coating the brisket

Corn Salad

  • 6 ears Corn Kernels removed
  • 0.5 cup Mayonnaise
  • 0.25 cup Cilantro Finely chopped
  • 2 tablespoons Lime juice Freshly squeezed
  • 0.5 cup Cotija cheese Grated

White BBQ Sauce

  • 1 cup Mayonnaise
  • 1 tablespoon Horseradish Prepared
  • 2 tablespoons Apple cider vinegar Adjust to taste
  • 1 tablespoon Worcestershire sauce

Garlic Butter

  • 0.5 cup Butter Melted
  • 3 cloves Garlic Minced
  • 1 tablespoon Parsley Chopped

Instructions
 

Preparation Steps

  • Trim the brisket of any excess fat and coat it thoroughly with yellow mustard.
  • Combine salt, pepper, paprika, garlic and onion powder. Rub the seasoning onto the brisket.

Cooking Instructions

  • Preheat your smoker or grill to about 250°F. Place the brisket inside and cook until it reaches an internal temperature of 205°F.
  • While the brisket is cooking, mix corn kernels with mayonnaise, cilantro, lime juice, and cheese to create the salad.

Sauce Instructions

  • In a bowl, whisk mayonnaise, horseradish, vinegar, and Worcestershire sauce for the white BBQ sauce.

Assembly Instructions

  • Slice the brisket, place on buns, and top with corn salad and a drizzle of BBQ sauce.
  • Brush the tops of the buns with prepared garlic butter and serve immediately.

Notes

Prepare the sauce and salad a day in advance to save time. Brisket is perfect for leftovers and can be individually refrigerated or frozen.
