This delightful Egg-in-a-hole breakfast sandwich delights with a kick of spiced avocado, creamy brie, and perfectly toasted sourdough.

  • 4 slices sourdough bread freshly baked recommended
  • 2 large eggs organic if possible
  • 8 slices bacon hickory-smoked for extra flavor
  • 1 tablespoon honey for caramelizing bacon
  • 1 teaspoon cayenne pepper adjust to taste
  • 1 cup brie cheese sliced
  • 6 tablespoons butter unsalted
  • 1 medium avocado ripe and mashed
  • 0.5 teaspoon salt to taste
  • 0.5 teaspoon black pepper freshly ground

Preparation Steps

  • Preheat your oven to 375°F (190°C). Arrange bacon on a baking sheet and drizzle with honey and cayenne pepper. Bake for 12-15 minutes until caramelized.
  • Melt 3 tablespoons of butter in a skillet over medium heat. Cut circles in the center of each bread slice. Place bread slices in the skillet.
  • Crack each egg into the cut-out circle of the bread. Season with salt and pepper. Cook for 2-3 minutes, or until the egg begins to set.
  • Flip each bread slice and add remaining butter. Layer each with brie cheese and caramelized bacon. Continue cooking until cheese melts.
  • Spread mashed avocado onto each sandwich. Rest for a minute, slice in half if desired, and serve immediately along with toasted bread cut-outs.

Notes

For best results, serve these sandwiches with freshly squeezed orange juice and a side of roasted tomatoes.
