Preheat your oven to 375°F (190°C). Arrange bacon on a baking sheet and drizzle with honey and cayenne pepper. Bake for 12-15 minutes until caramelized.
Melt 3 tablespoons of butter in a skillet over medium heat. Cut circles in the center of each bread slice. Place bread slices in the skillet.
Crack each egg into the cut-out circle of the bread. Season with salt and pepper. Cook for 2-3 minutes, or until the egg begins to set.
Flip each bread slice and add remaining butter. Layer each with brie cheese and caramelized bacon. Continue cooking until cheese melts.
Spread mashed avocado onto each sandwich. Rest for a minute, slice in half if desired, and serve immediately along with toasted bread cut-outs.
Notes
For best results, serve these sandwiches with freshly squeezed orange juice and a side of roasted tomatoes.
