preferably chilled

vegetable oil

eggs
lightly beaten

frozen peas
thawed

soy sauce
low sodium

bunch
green onions
chopped
Instructions
Preparation Steps
Heat 1 tablespoon of oil in a large pan over medium heat. Add eggs and scramble until fully cooked. Remove from pan.
Add remaining oil to the pan, then add the rice and stir-fry for 5 minutes.
Stir in the peas, scrambled eggs, and soy sauce. Cook until heated through.
Garnish with green onions and serve hot.
Notes
For a spicier version, add chili sauce to taste.
