Ingredients
- 4 tablespoons unsalted butter divided
- 2 garlic cloves minced
- 1/2 cup dry white wine
- 1/2 cup chicken or vegetable broth
- 1/2 cup heavy cream
- 1/4 cup Parmesan cheese finely grated
- 1/4 teaspoon kosher salt or to taste
- 1/4 teaspoon black pepper freshly ground
- 2 tablespoons fresh parsley chopped
Instructions
Melt 2 tablespoons of the butter in a wide skillet over medium heat. Add the garlic and cook for 30 seconds, just until fragrant.
Pour in the white wine and broth. Simmer uncovered for 6 to 8 minutes, stirring occasionally, until the liquid is reduced by about half.
Lower the heat to medium-low and whisk in the remaining 2 tablespoons butter and the heavy cream. Warm gently without letting the sauce boil hard.
Whisk in the Parmesan, salt, and pepper. Cook for 2 to 3 minutes, until the cheese melts and the sauce lightly coats a spoon.
Remove from the heat, stir in the parsley if using, and taste for seasoning. Serve immediately over pasta, chicken, seafood, or vegetables.
