Easy Slow Cooker Dump Meals with Beef and Vegetables

Ingredients
- 1 lb boneless beef chuck roast cut into 1-inch cubes
- 1 lb baby potatoes halved
- 3 medium carrots cut into thick coins
- 1 medium yellow onion chopped
- 3 cloves garlic minced
- 2 cups beef broth
- 2 tbsp tomato paste
- 1 tbsp Worcestershire sauce
- 1 tsp dried thyme
- 1 tsp kosher salt
- 1/2 tsp black pepper
- 2 tbsp cornstarch mixed with 3 tbsp cold water
Instructions
Add the beef, potatoes, carrots, onion, and garlic to a 6-quart slow cooker.
Whisk the broth, tomato paste, Worcestershire sauce, thyme, salt, and pepper in a measuring jug, then pour it over the ingredients.
Cover and cook on LOW for 6 to 7 hours, until the beef is fork-tender and the vegetables are soft.
Stir the cornstarch slurry into the hot liquid during the final 15 minutes with the cooker on HIGH, if a thicker gravy is desired.
Rest for 10 minutes, taste for seasoning, and serve while hot.
