Ingredients
- 1/2 cup butter melted
- 1 30-ounce package shredded hash brown potatoes frozen
- 1 pound breakfast sausage bulk
- 1/2 cup green bell pepper finely chopped
- 1/2 cup red bell pepper finely chopped
- 1/2 cup onion finely chopped
- 2 cups shredded Monterey Jack and sharp cheddar cheese combined
- 8 large eggs beaten
- 2 cups half-and-half or whole milk
- 1 teaspoon salt divided
- 1/2 teaspoon black pepper divided
Instructions
Heat the oven to 350°F and melt the butter in a 9-by-13-inch baking dish.
Add the frozen hash browns, season with salt and pepper, and stir to coat. Bake about 30 minutes, until almost tender and just beginning to brown.
Meanwhile, brown the sausage with the peppers and onion in a skillet, breaking it into small pieces. Drain excess grease.
Stir the sausage mixture into the partially baked hash browns, then spread the cheese over the top.
Whisk the eggs with the half-and-half and pour the mixture evenly over the casserole.
Bake immediately for about 50 minutes, or cover and refrigerate overnight before baking 45 to 50 minutes. The edges should be browned and the center should barely jiggle.
