  • Heat a non-stick skillet over medium heat and add the pesto, spreading it evenly across the pan. Heat until it bubbles lightly for about 1-2 minutes.
  • Crack the eggs into the skillet, spacing them apart. Season with salt and pepper.
  • Cover the skillet and cook for 2-4 minutes until the egg whites are set.
  • While the eggs are cooking, toast the bread slices until golden brown.
  • Place each cooked egg onto a slice of toasted bread, spoon additional pesto over the top, and serve immediately.
