A simple and healthy ground turkey meatloaf recipe that's moist, flavorful, and perfect for a weeknight dinner. Made with pantry staples and baked to perfection.
Preheat oven to 350°F (175°C). Lightly grease a 9x5-inch loaf pan or line with parchment paper.
In a small bowl, combine breadcrumbs and milk. Let sit for 5 minutes to soften.
In a large mixing bowl, combine ground turkey, soaked breadcrumbs, egg, onion, celery, bell pepper, garlic, Worcestershire sauce, thyme, salt, pepper, ketchup, and Dijon mustard. Mix gently with your hands or a spoon until just combined. Do not overmix.
Transfer the mixture to the prepared loaf pan and shape into a loaf. Smooth the top.
In a small bowl, mix 2 tablespoons ketchup with 1 teaspoon water. Spread evenly over the top of the meatloaf.
Bake for 45–50 minutes, or until the internal temperature reaches 165°F (74°C) when tested with a meat thermometer.
Remove from oven and let rest for 10 minutes before slicing and serving.
Notes
For a sweeter glaze, substitute the ketchup topping with a mixture of ketchup, brown sugar, and a dash of apple cider vinegar.
