  • 0.5 cup dried cranberries unsweetened preferred
  • 0.5 cup sunflower seeds
  • 0.25 cup diced red onion
  • 120 g green apple thinly sliced

Dressing

  • 0.5 cup plain Greek yogurt low fat
  • 2 tablespoons mayonnaise
  • 1 tablespoon lemon juice freshly squeezed
  • 1 teaspoon honey
  • 0.25 teaspoon salt
  • 0.125 teaspoon ground black pepper

Preparation Steps

  • In a large bowl, combine the broccoli florets, dried cranberries, sunflower seeds, diced red onion, and green apple slices until well mixed.
  • In a separate small bowl, whisk together Greek yogurt, mayonnaise, lemon juice, honey, salt, and black pepper until smooth.
  • Pour the dressing over the salad and toss until all ingredients are evenly coated.
  • Refrigerate for at least 10 minutes before serving to enhance flavors and crispness.
  • Serve chilled and enjoy as a side dish or light lunch.

Notes

For added crunch, stir in sunflower seeds just before serving. Can be stored in an airtight container in the refrigerator for up to 3 days.
