Whisk bourbon, soy sauce, apple juice, brown sugar, garlic, ginger, and the cornstarch slurry in a bowl.
Heat the oil in a large skillet over medium-high heat. Add chicken and cook until browned and cooked through, about 8 to 10 minutes.
Pour the sauce into the skillet and bring it to a gentle simmer.
Cook, stirring often, until the sauce is glossy and thick enough to coat the chicken, about 3 to 5 minutes.
Serve hot with sliced scallions if using.
