- 3 ripe bananas mashed (about 1 ¼ cups)
- ½ cup unsalted butter melted (or vegetable oil)
- ¾ cup granulated sugar or brown sugar for more flavor
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 ½ cups all-purpose flour
- 1 teaspoon baking soda
- ½ teaspoon salt
- ½ teaspoon ground cinnamon optional
- ½ cup chopped walnuts or chocolate chips optional
Preheat oven to 350°F (175°C). Grease a 9x5-inch loaf pan and line it with parchment paper.
In a mixing bowl, mash the bananas with a fork until smooth.
Stir in melted butter, sugar, eggs, and vanilla extract until combined.
Sprinkle baking soda, salt, and cinnamon over the mixture, then mix.
Gently fold in the flour until just combined (do not overmix).
If using, stir in walnuts or chocolate chips.
Pour batter into the prepared loaf pan and smooth the top.
Bake for 50-60 minutes, or until a toothpick inserted in the center comes out clean.
Let cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
