Instructions
Preparation Steps
Preheat oven to 350°F (175°C). Line two baking sheets with parchment paper.
In a large bowl, cream together the butter, granulated sugar, and brown sugar until light and fluffy.
Beat in eggs one at a time, then stir in mint extract.
In another bowl, whisk together the flour, baking soda, and salt. Gradually blend into the creamed mixture.
Fold in 3/4 cup of the chocolate chips.
Drop dough by rounded tablespoonfuls onto prepared baking sheets.
Bake for 8-10 minutes, or until edges are lightly browned. Remove from the oven and press the remaining chocolate chips on top.
Cool on baking sheets for 5 minutes before transferring to wire racks to cool completely.
Notes
Store in an airtight container for up to a week. For a mintier cookie, add a few drops of green food coloring.
