Instructions
Preparation Steps
Preheat the oven to 375°F (190°C) and line two baking sheets with parchment paper.
Mix the gluten-free flour, salt, and baking powder in a large bowl.
Grate the cold butter into the flour mixture and mix with your hands until it resembles coarse crumbs.
Add coconut oil and ice water gradually, mixing until the dough comes together. Ensure it's not sticky.
Wrap the dough in plastic wrap and chill in the refrigerator for 20 minutes.
Roll the dough on a floured surface to slightly more than 1/8-inch thickness. Cut with a round cookie cutter.
Place the cut-out crackers on prepared sheets, leaving space between each. Poke holes to prevent puffing.
Bake in the preheated oven for 10-15 minutes or until the edges are golden.
Remove from oven and brush with melted butter. Allow crackers to cool before storing.
