Preparation Steps
Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone baking mat.
In a food processor, combine the oats, almond flour, baking powder, baking soda, cinnamon, and sea salt. Pulse until well-mixed.
Add coconut sugar, almond milk, and vanilla extract to the dry mixture. Pulse until a dough forms.
Roll the dough into small balls, about 1 inch in diameter, and slightly flatten each one.
Place the cookies on the prepared baking sheet and sprinkle the tops with additional cinnamon.
Bake for 12 minutes or until the edges are golden and the tops are slightly cracked.
Allow to cool on the baking sheet for five minutes before transferring to a cooling rack to cool completely.
Notes
Store cookies in an airtight container for up to 3 days. For a nuttier flavor, try adding a handful of chopped walnuts or pecans to the dough.
