Delicious Cinnamon Oat Cookies

These tasty Cinnamon Oat Cookies are gluten-free and loaded with warm, comforting flavors. Perfect with a hot drink or as a snack any time of day.

  • 1.5 cups gluten-free oats ground to flour consistency
  • 1 cup almond flour lightly packed
  • 1 teaspoon baking powder gluten-free
  • 0.5 teaspoon baking soda
  • 1 tablespoon ground cinnamon plus more for sprinkling
  • 0.25 teaspoon sea salt
  • 0.5 cup coconut sugar
  • 0.5 cup unsweetened almond milk or any plant-based milk
  • 2 teaspoons pure vanilla extract

Preparation Steps

  • Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone baking mat.
  • In a food processor, combine the oats, almond flour, baking powder, baking soda, cinnamon, and sea salt. Pulse until well-mixed.
  • Add coconut sugar, almond milk, and vanilla extract to the dry mixture. Pulse until a dough forms.
  • Roll the dough into small balls, about 1 inch in diameter, and slightly flatten each one.
  • Place the cookies on the prepared baking sheet and sprinkle the tops with additional cinnamon.
  • Bake for 12 minutes or until the edges are golden and the tops are slightly cracked.
  • Allow to cool on the baking sheet for five minutes before transferring to a cooling rack to cool completely.

Notes

Store cookies in an airtight container for up to 3 days. For a nuttier flavor, try adding a handful of chopped walnuts or pecans to the dough.
