  • 1.5 cups sugar granulated
  • 1 cup butter unsalted, melted
  • 1 cup pumpkin puree canned or homemade
  • 2 eggs large
  • 2 tsp vanilla extract
  • 2 cups all-purpose flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp ground cinnamon
  • 0.5 tsp salt
  • 1.5 cups chocolate chips semi-sweet

Preparation Steps

  • Preheat oven to 350°F (175°C). Grease and line a 9x13 inch baking dish with parchment paper.
  • In a large bowl, whisk together the sugar, melted butter, and pumpkin puree until smooth.
  • Add the eggs and vanilla extract, beating until the mixture is well combined.
  • In a separate bowl, mix together the flour, baking powder, baking soda, cinnamon, and salt.
  • Gradually add the dry ingredients to the pumpkin mixture, stirring until just combined. Fold in the chocolate chips.
  • Pour the batter into the prepared baking dish and spread it evenly.
  • Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
  • Allow to cool in the pan before slicing into bars and serving.

Notes

For a nutty twist, add 1/2 cup of chopped walnuts or pecans to the batter before baking. Store leftovers in an airtight container at room temperature for up to 3 days.
