  • 2 pounds baby potatoes washed and halved
  • 3 tablespoons olive oil
  • 1 teaspoon dried rosemary or fresh, chopped
  • 1 teaspoon dried thyme
  • 1 teaspoon kosher salt
  • 0.5 teaspoon black pepper freshly ground
  • 2 cloves garlic minced
  • 1 tablespoon lemon juice freshly squeezed

Preparation Steps

  • Preheat your oven to 400°F (205°C) and line a large baking sheet with parchment paper.
  • In a large bowl, combine the halved potatoes, olive oil, rosemary, thyme, salt, and pepper. Toss well to ensure the potatoes are evenly coated.
  • Spread the potatoes in a single layer on the prepared baking sheet.
  • Bake in the preheated oven for 25 minutes, stirring halfway through baking time.
  • Remove from oven, add the minced garlic and lemon juice, then return to the oven for an additional 10-15 minutes or until the potatoes are golden and crispy.
  • Allow to cool slightly before serving. Enjoy as a side dish or a hearty snack.

Notes

For an extra burst of freshness, sprinkle with chopped fresh parsley before serving. These potatoes pair beautifully with roasted chicken or grilled steak.
