  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 2 large eggs beaten
  • 2 cups vegetable oil for frying

Herb Dip

  • 1.5 cups Greek yogurt
  • 3 tablespoons fresh dill chopped
  • 2 tablespoons lemon juice freshly squeezed
  • 1 teaspoon salt
  • 1 teaspoon black pepper freshly ground

Preparation Steps

  • Begin by heating the vegetable oil in a large skillet over medium-high heat until it reaches 350°F.
  • In a shallow dish, mix together the flour, garlic powder, and salt.
  • Dip the zucchini sticks in the flour mixture, followed by the beaten eggs, and finally coat them with panko breadcrumbs.
  • Carefully place the coated zucchini sticks into the hot oil, frying them in batches until golden brown, about 3-4 minutes per side.
  • Remove from oil and drain on paper towels.
  • For the herb dip, combine Greek yogurt, chopped dill, lemon juice, salt, and pepper in a bowl. Mix well.
  • Serve the warm zucchini sticks with the refreshing herb dip on the side.

Notes

For a spicier version, add a pinch of cayenne pepper to the flour mixture.
