Preparation Steps
Begin by heating the vegetable oil in a large skillet over medium-high heat until it reaches 350°F.
In a shallow dish, mix together the flour, garlic powder, and salt.
Dip the zucchini sticks in the flour mixture, followed by the beaten eggs, and finally coat them with panko breadcrumbs.
Carefully place the coated zucchini sticks into the hot oil, frying them in batches until golden brown, about 3-4 minutes per side.
Remove from oil and drain on paper towels.
For the herb dip, combine Greek yogurt, chopped dill, lemon juice, salt, and pepper in a bowl. Mix well.
Serve the warm zucchini sticks with the refreshing herb dip on the side.
Notes
For a spicier version, add a pinch of cayenne pepper to the flour mixture.
