Croque Madame Breakfast Cups with Ham and Gruyere

Ingredients
- 6 large eggs
- 6 slices white or brioche bread crusts trimmed
- 6 slices thinly sliced ham
- 1 cup shredded Gruyere cheese
- 2 tablespoons butter melted
- 1/4 teaspoon kosher salt
- 1/4 teaspoon black pepper
- 1 tablespoon chopped chives optional garnish
Instructions
Heat the oven to 375°F and grease six wells of a standard muffin pan with some of the melted butter.
Press one trimmed bread slice into each prepared muffin well, folding the corners gently so the bread forms a cup.
Line each bread cup with a slice of ham and sprinkle in half of the Gruyere.
Crack one egg into each cup, season with salt and pepper, and top with the remaining cheese.
Brush the exposed bread edges with the remaining melted butter and bake for 20 to 25 minutes, until the whites are set and the yolks reach your preferred doneness.
Rest the cups for 5 minutes, loosen the edges with a thin spatula, and garnish with chives if using.
