  • 3.5 lbs ribeye steak cut into large pieces
  • 2 lbs red potatoes quartered
  • 1 large white onion diced
  • 5 cloves garlic minced
  • 1.5 cups chicken broth low sodium
  • 3 tablespoons soy sauce reduced sodium
  • 3 tablespoons olive oil
  • 2 ounces ranch seasoning mix 1 packet
  • 1 teaspoon salt or to taste
  • 1 teaspoon black pepper or to taste
  • 2 tablespoons fresh parsley chopped, for garnish

Instructions
 

Preparation Steps

  • Sear the steak pieces in olive oil over medium-high heat in a large skillet until browned on all sides.
  • Place the seared steak in a slow cooker, followed by the potatoes, onion, and garlic.
  • Sprinkle with salt, pepper, and ranch seasoning. Pour chicken broth and soy sauce over the top.
  • Cover and cook on low for 7-8 hours or on high for 3-4 hours until the steak is tender and the potatoes are cooked through.
  • Serve hot, garnished with chopped parsley.

Notes

For a thicker sauce, mix 1 tablespoon of flour with 2 tablespoons of cold water and add to the slow cooker at the end of cooking.
