Preparation Steps
In a small bowl, whisk together soy sauce, chicken broth, sesame oil, brown sugar, ginger, and garlic.
Place the chicken pieces in the slow cooker.
Pour the soy sauce mixture over the chicken.
Cover and cook on low for 3 hours, or until chicken is cooked through.
Remove chicken from the slow cooker and shred it with two forks. Return the shredded chicken to the slow cooker.
Add the broccoli florets and shredded carrots to the slow cooker. Stir to combine.
Cover and cook on low for another 30 minutes, or until vegetables are tender.
Add the cooked lo mein noodles to the slow cooker and stir to combine with the chicken and vegetables.
Serve hot, garnished with chopped green onions.
Notes
This recipe is easily customizable. Feel free to add other vegetables like bell peppers, snap peas, or mushrooms. For a spicier kick, add a pinch of red pepper flakes to the sauce.
