  • 1 pound boneless, skinless chicken thighs cut into 1 inch pieces
  • 0.5 cup soy sauce
  • 0.25 cup chicken broth
  • 2 tablespoon sesame oil
  • 1 tablespoon brown sugar
  • 1 teaspoon ginger minced
  • 2 cloves garlic minced
  • 8 ounces lo mein noodles cooked according to package directions
  • 1 cup broccoli florets
  • 0.5 cup shredded carrots
  • 0.25 cup green onions chopped for garnish

Preparation Steps

  • In a small bowl, whisk together soy sauce, chicken broth, sesame oil, brown sugar, ginger, and garlic.
  • Place the chicken pieces in the slow cooker.
  • Pour the soy sauce mixture over the chicken.
  • Cover and cook on low for 3 hours, or until chicken is cooked through.
  • Remove chicken from the slow cooker and shred it with two forks. Return the shredded chicken to the slow cooker.
  • Add the broccoli florets and shredded carrots to the slow cooker. Stir to combine.
  • Cover and cook on low for another 30 minutes, or until vegetables are tender.
  • Add the cooked lo mein noodles to the slow cooker and stir to combine with the chicken and vegetables.
  • Serve hot, garnished with chopped green onions.

Notes

This recipe is easily customizable. Feel free to add other vegetables like bell peppers, snap peas, or mushrooms. For a spicier kick, add a pinch of red pepper flakes to the sauce.
