  • 3.5 lbs chicken thighs skinless and boneless
  • 3 lbs sweet potatoes peeled and diced into 1-inch cubes
  • 1 cup chicken broth
  • 2 teaspoons dried thyme
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 2 tablespoons olive oil
  • 2 teaspoons salt to taste
  • 1 teaspoon ground black pepper to taste

Preparation Steps

  • Arrange the sweet potatoes evenly on the bottom of a 6-quart or larger slow cooker.
  • Place the chicken thighs on top of the sweet potatoes. Pour the chicken broth over the chicken.
  • Drizzle olive oil over the ingredients. Sprinkle with dried thyme, garlic powder, onion powder, salt, and black pepper.
  • Cover and cook on LOW for 6-8 hours or on HIGH for 4-5 hours until the chicken is cooked through and the sweet potatoes are tender.
  • Stir gently before serving to mix all flavors well. Serve hot.

Notes

For a richer taste, consider adding a splash of balsamic vinegar before serving. Leftovers can be refrigerated in an airtight container for up to 3 days.
