Crock Pot Creamy Cajun Chicken Pasta
Make creamy Cajun chicken pasta in the slow cooker with tender chicken, tomatoes, cream cheese, Parmesan, and penne for an easy six-serving dinner.

Ingredients
- 2 lb boneless skinless chicken breasts cubed
- 2 tbsp Cajun seasoning divided
- 1 yellow onion diced
- 3 cloves garlic minced
- 1 can diced tomatoes 14.5 oz, drained
- 2 cups chicken broth
- 8 oz cream cheese cubed
- 1 cup heavy cream
- 12 oz penne pasta cooked separately
- 1 cup shredded Parmesan
- 2 tbsp fresh parsley chopped
Instructions
Toss the cubed chicken with half of the Cajun seasoning and place it in the slow cooker.
Add the onion, garlic, drained tomatoes, remaining seasoning, and chicken broth. Cover and cook on low for 4 hours, until the chicken is tender.
Stir in the cream cheese and heavy cream. Cover for 15 minutes, then stir until the sauce is smooth.
Cook the penne separately until al dente, drain, and fold it into the slow cooker sauce.
Stir in the Parmesan and finish with parsley. Serve while hot.
