Crispy Lemon Herb Chicken Sliders with Garlic Aioli

Ingredients
  

Main Ingredients

  • 3 cups vegetable oil for frying
  • 8 pieces boneless chicken thighs halved
  • 1.5 cups buttermilk for marinating
  • 2 tablespoons lemon juice freshly squeezed
  • 2 cups all-purpose flour for breading
  • 2 tablespoons herbes de Provence or mixed Italian herbs
  • 1 teaspoon kosher salt to taste
  • 1 teaspoon ground black pepper to taste

Slider Toppings

  • 16 slider buns soft mini buns
  • 1 cup garlic aioli store-bought or homemade
  • 1 cup arugula for serving
  • 2 medium tomatoes sliced

Preparation Steps

  • In a large bowl, combine the chicken pieces with buttermilk and lemon juice. Cover and refrigerate for at least 1 hour or overnight.
  • In a shallow dish, mix together flour, herbes de Provence, salt, and pepper.
  • Remove chicken from the marinade, letting excess drip off, and coat each piece in the flour mixture.
  • In a frying pan, heat oil to 350°F. Fry chicken in batches for 5-7 minutes until golden and cooked through. Drain on paper towels.
  • Toast slider buns until golden. Spread garlic aioli on each bun.
  • Assemble sliders by layering fried chicken, arugula, and tomato slices between the prepared buns. Serve warm.

Notes

For extra crunch, you can add a few onion rings to each slider. Adjust seasoning to your preference.
