Ingredients
  

For the Chicken:

  • 2 chicken breasts cut into bite-sized pieces
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon paprika
  • ½ teaspoon garlic powder
  • ½ cup buttermilk
  • 1 egg

For the Coating:

  • 1 cup all-purpose flour
  • ½ cup cornstarch
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon paprika
  • ½ teaspoon cayenne pepper optional, for extra heat
  • Vegetable oil for frying

For the Bang Bang Sauce:

  • ½ cup mayonnaise
  • ¼ cup sweet chili sauce
  • 1 tablespoon sriracha
  • 1 teaspoon honey
  • 1 teaspoon lime juice

For Garnish:

  • 2 tablespoons green onions chopped
  • 1 teaspoon sesame seeds

Instructions
 

Prep the Chicken:

  • In a bowl, mix chicken pieces with salt, black pepper, paprika, and garlic powder.
  • Pour in buttermilk and whisk in egg. Let marinate for 10 minutes.

Prepare the Coating:

  • In a separate bowl, combine flour, cornstarch, baking powder, salt, black pepper, paprika, and cayenne pepper.
  • Dredge marinated chicken pieces in the flour mixture, pressing lightly to coat well.

Fry the Chicken:

  • Heat vegetable oil in a deep skillet or fryer to 350°F (175°C).
  • Fry chicken in batches for 4-5 minutes, until crispy and golden brown.
  • Remove and drain on a wire rack (not paper towels to keep them crispy).

Make the Bang Bang Sauce:

  • In a bowl, whisk together mayonnaise, sweet chili sauce, sriracha, honey, and lime juice.

Toss & Serve:

  • Toss crispy chicken in Bang Bang sauce or drizzle on top.
  • Garnish with green onions and sesame seeds.

Notes

  • Extra Crispy? Double-coat the chicken by dipping it back in buttermilk and flour before frying.
  • Less Spicy? Reduce sriracha or omit cayenne pepper.
  • Oven-Baked Option: Bake at 400°F (200°C) for 20-25 minutes, flipping halfway.
  • Air Fryer Option: Spray with oil and air-fry at 375°F (190°C) for 15 minutes, shaking halfway.
