Creamy Tuscan Salmon Pasta – A Date Night Delight

This Creamy Tuscan Salmon Pasta combines tender salmon, spinach, and sun-dried tomatoes in a luscious garlic Parmesan sauce for an unforgettable meal that will leave you and your loved ones coming back for more.

  • 1.5 lbs salmon fillets patted dry and cut into chunks
  • 1 lb fettuccine pasta cooked al dente
  • 3 tablespoons olive oil divided
  • 4 tablespoons unsalted butter
  • 1 medium onion chopped
  • 5 cloves garlic minced
  • 1 cup sun-dried tomatoes drained and chopped
  • 2 cups heavy cream
  • 1 teaspoon Italian seasoning
  • 1 teaspoon red pepper flakes optional
  • 1.5 cups Parmesan cheese grated
  • 2 cups fresh spinach roughly chopped
  • 1 teaspoon salt to taste
  • 0.5 teaspoon black pepper freshly ground, to taste

Instructions
 

Preparation Steps

  • Heat 2 tablespoons of olive oil in a large skillet over medium heat. Add salmon chunks and cook each side for 3-4 minutes until golden and cooked through. Remove and set aside.
  • In the same skillet, add the remaining olive oil and butter. Sauté onions for 3 minutes until translucent, then add garlic and sun-dried tomatoes, cooking for another minute.
  • Pour in the heavy cream, stirring to combine. Add the Italian seasoning and red pepper flakes. Bring to a gentle simmer.
  • Stir in the spinach and cook until wilted. Add Parmesan cheese, mixing until melted and the sauce thickens.
  • Add the cooked pasta and toss it in the sauce. Gently mix in the salmon pieces and season with salt and pepper to taste.
  • Serve immediately, garnished with extra Parmesan and a sprinkle of fresh herbs if desired.

Notes

For a smokier flavor, consider adding a touch of smoked paprika to the sauce.
