Creamy Spinach Chicken Bake: A New Family Favorite!

This comforting chicken bake combines succulent pieces of chicken with creamy spinach and cheese sauce, topped off with a crunchy breadcrumb topping. A delicious and easy meal that’s perfect for any night of the week.

  • 2 lbs boneless, skinless chicken breasts cut into bite-sized pieces
  • 10 oz fresh spinach washed and roughly chopped
  • 1 cup creamy Alfredo sauce store-bought or homemade
  • 1 cup shredded mozzarella cheese
  • 1 cup grated Parmesan cheese
  • 1 cup panko breadcrumbs for topping
  • 3 tablespoons olive oil divided
  • salt and pepper to taste

Preparation Steps

  • Preheat the oven to 375°F (190°C). Lightly grease a 9x13 inch baking dish with cooking spray.
  • Heat 2 tablespoons of olive oil in a large skillet over medium-high heat. Add the chicken pieces and season with salt and pepper. Cook until golden brown on all sides, about 5-7 minutes. Transfer to a bowl and set aside.
  • In the same skillet, add the remaining tablespoon of olive oil. Add the spinach and sauté until wilted, about 2-3 minutes.
  • In a large bowl, combine the cooked chicken, sautéed spinach, Alfredo sauce, mozzarella cheese, and half of the Parmesan cheese. Mix well.
  • Pour the mixture into the prepared baking dish. Sprinkle the remaining Parmesan cheese and panko breadcrumbs evenly on top.
  • Bake in the preheated oven for 20-25 minutes, or until the top is golden brown and bubbly. Let it cool for a few minutes before serving.

Notes

For an extra kick, consider adding a pinch of red pepper flakes to the sauce during preparation.
