2lbsboneless, skinless chicken breastscut into bite-sized pieces

1cupcreamy Alfredo saucestore-bought or homemade
1cupshredded mozzarella cheese
1cupgrated Parmesan cheese
1cuppanko breadcrumbsfor topping

Preparation Steps
Preheat the oven to 375°F (190°C). Lightly grease a 9x13 inch baking dish with cooking spray.
Heat 2 tablespoons of olive oil in a large skillet over medium-high heat. Add the chicken pieces and season with salt and pepper. Cook until golden brown on all sides, about 5-7 minutes. Transfer to a bowl and set aside.
In the same skillet, add the remaining tablespoon of olive oil. Add the spinach and sauté until wilted, about 2-3 minutes.
In a large bowl, combine the cooked chicken, sautéed spinach, Alfredo sauce, mozzarella cheese, and half of the Parmesan cheese. Mix well.
Pour the mixture into the prepared baking dish. Sprinkle the remaining Parmesan cheese and panko breadcrumbs evenly on top.
Bake in the preheated oven for 20-25 minutes, or until the top is golden brown and bubbly. Let it cool for a few minutes before serving.
Notes
For an extra kick, consider adding a pinch of red pepper flakes to the sauce during preparation.
