Instructions
Preparation Steps
In a large pot, melt butter over medium heat. Add onions and sauté until translucent.
Add the cubed potatoes and chicken broth. Bring to a boil and cook until potatoes are tender.
Using an immersion blender, blend the soup until smooth and creamy.
Stir in the heavy cream, cheddar cheese, salt, and pepper. Cook until heated through.
Ladle soup into bowls and top with crumbled bacon before serving.
Notes
For a vegetarian option, omit the bacon and use vegetable broth instead of chicken broth.
