  • 4 cups potatoes peeled and cubed
  • 3 cups chicken broth
  • 1 cup heavy cream
  • 6 slices bacon crisped and crumbled
  • 1 cup cheddar cheese shredded
  • 0.5 cup onions finely chopped
  • 2 tablespoons butter
  • 0.5 teaspoon black pepper ground
  • 1 teaspoon salt to taste

Preparation Steps

  • In a large pot, melt butter over medium heat. Add onions and sauté until translucent.
  • Add the cubed potatoes and chicken broth. Bring to a boil and cook until potatoes are tender.
  • Using an immersion blender, blend the soup until smooth and creamy.
  • Stir in the heavy cream, cheddar cheese, salt, and pepper. Cook until heated through.
  • Ladle soup into bowls and top with crumbled bacon before serving.

Notes

For a vegetarian option, omit the bacon and use vegetable broth instead of chicken broth.
