Creamy Mushroom & Spinach Linguine: A Comforting Pasta Delight!

This Creamy Mushroom & Spinach Linguine is a delightful combination of earthy mushrooms and fresh spinach enveloped in a velvety, creamy sauce. Perfect for a cozy dinner at home.

  • 1 pound linguine or pasta of your choice
  • 2 tablespoons olive oil
  • 1 pound cremini mushrooms sliced
  • 3 cloves garlic minced
  • 1 cup heavy cream
  • 1 cup Parmesan cheese grated
  • 5 cups fresh spinach
  • 1 teaspoon salt or to taste
  • 1 teaspoon black pepper freshly ground

Preparation Steps

  • Cook the linguine according to the package instructions until al dente. Reserve 1 cup of pasta water and drain.
  • In a large skillet, heat olive oil over medium heat. Add the mushrooms and sauté for 7-8 minutes until golden brown.
  • Add minced garlic to the mushrooms and sauté for an additional 1-2 minutes until fragrant.
  • Lower the heat and pour in the heavy cream, stirring slowly to combine.
  • Add the Parmesan cheese and continue stirring until the cheese melts into a smooth sauce.
  • Stir in the fresh spinach and cook until wilted. Season with salt and pepper.
  • Combine the cooked linguine with the mushroom and spinach sauce. Add reserved pasta water gradually if sauce is too thick.

Notes

For added flavor, top with a sprinkle of red pepper flakes or lemon zest before serving.
