Instructions
Preparation Steps
Cook the linguine according to the package instructions until al dente. Reserve 1 cup of pasta water and drain.
In a large skillet, heat olive oil over medium heat. Add the mushrooms and sauté for 7-8 minutes until golden brown.
Add minced garlic to the mushrooms and sauté for an additional 1-2 minutes until fragrant.
Lower the heat and pour in the heavy cream, stirring slowly to combine.
Add the Parmesan cheese and continue stirring until the cheese melts into a smooth sauce.
Stir in the fresh spinach and cook until wilted. Season with salt and pepper.
Combine the cooked linguine with the mushroom and spinach sauce. Add reserved pasta water gradually if sauce is too thick.
Notes
For added flavor, top with a sprinkle of red pepper flakes or lemon zest before serving.
