Creamy Cranberry Apple Slaw

This creamy cranberry apple slaw combines crisp apples, cabbage, carrots, celery, dried cranberries, and toasted almonds with a tangy yogurt-mayo dressing for a fresh 15-minute side dish.

  • 2 red apples firm, cut into thin matchsticks
  • 2 cups cabbage shredded
  • 1 cup carrot cut into matchsticks
  • 1/2 cup celery thinly sliced
  • 1/3 cup dried cranberries soaked briefly in hot water and drained
  • 1/3 cup toasted almonds sliced
  • 1/3 cup Greek yogurt plain
  • 1/3 cup mayonnaise
  • 2 tablespoons apple cider vinegar
  • 2 tablespoons honey
  • 2 teaspoons Dijon mustard
  • salt to taste
  • black pepper freshly ground, to taste

  • If using dried cranberries, cover them with hot water for 5 minutes, then drain well.
  • Cut the apples into thin matchsticks.
  • Toast the sliced almonds and roughly chop them if needed.
  • Mix the Greek yogurt, mayonnaise, apple cider vinegar, honey, Dijon mustard, salt, and black pepper for the dressing.
  • Add the apples, cabbage, carrot, celery, cranberries, and almonds to a large bowl. Pour over the dressing and mix well.
  • Serve as a side dish.
