  • 1.5 lbs Boneless, skinless chicken breasts cut into bite-sized pieces
  • 1 cup Long-grain white rice
  • 1.5 cups Chicken broth low sodium
  • 1 can Cream of mushroom soup
  • 0.5 cup Milk
  • 0.5 cup Frozen peas
  • 0.25 cup Shredded cheddar cheese
  • 0.5 tsp Salt
  • 0.25 tsp Black pepper

Preparation Steps

  • Preheat oven to 350°F (175°C). Grease a 9x13 inch baking dish.
  • In a large bowl, combine the cooked chicken, rice, chicken broth, cream of mushroom soup, milk, peas, salt, and pepper.
  • Pour the mixture into the prepared baking dish.
  • Sprinkle the cheddar cheese over the top.
  • Bake for 30-45 minutes, or until golden brown and bubbly.
  • Let stand for 10 minutes before serving.

Notes

For a richer flavor, use heavy cream instead of milk. You can also add other vegetables, such as carrots or celery.
