Creamy Chicken Pasta

A delicious and easy creamy chicken pasta recipe perfect for a weeknight dinner. Tender chicken and al dente pasta coated in a rich, creamy sauce.

  • 1 pound boneless, skinless chicken breasts cut into bite-sized pieces
  • 0.5 pound pasta such as fettuccine or penne
  • 2 tablespoon olive oil
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • 2 cup heavy cream
  • 0.5 cup Parmesan cheese grated
  • 0.25 cup chicken broth
  • 0.5 teaspoon dried Italian seasoning
  • 0.25 teaspoon black pepper
  • 0.5 teaspoon salt or to taste

Preparation Steps

  • Cook pasta according to package directions. Drain and set aside.
  • While pasta is cooking, heat olive oil in a large skillet over medium-high heat. Add chicken and cook until browned and cooked through, about 5-7 minutes. Remove chicken from skillet and set aside.
  • Add chopped onion to the skillet and cook until softened, about 3-4 minutes. Add minced garlic and cook for 1 minute more until fragrant.
  • Pour in heavy cream and chicken broth. Stir in Italian seasoning, black pepper, and salt. Bring to a simmer.
  • Reduce heat to low and stir in grated Parmesan cheese until melted and the sauce is smooth.
  • Return the cooked chicken to the skillet and stir to combine.
  • Add the cooked pasta to the skillet and toss to coat with the creamy sauce.
  • Serve immediately, garnished with extra Parmesan cheese if desired.

Notes

This creamy chicken pasta can be made ahead and reheated gently. Add a splash of milk or cream when reheating if the sauce has thickened too much.
