  • 2 tablespoons olive oil extra virgin
  • 1 medium yellow onion chopped
  • 4 cups carrots sliced
  • 1.5 cups red lentils rinsed
  • 6 cups vegetable broth low sodium
  • 1 teaspoon ground cumin
  • 1 cup coconut milk canned, full-fat
  • 1 teaspoon kosher salt or to taste
  • 0.5 teaspoon ground black pepper or to taste

Preparation Steps

  • Heat olive oil in a large pot over medium heat. Add chopped onion and sauté until translucent, about 5 minutes.
  • Add sliced carrots, rinsed lentils, vegetable broth, and ground cumin to the pot. Stir well to combine.
  • Bring the mixture to a boil. Reduce heat to a simmer, cover, and cook for 20-25 minutes, or until carrots and lentils are tender.
  • Remove from heat and blend the soup using an immersion blender until smooth. Stir in coconut milk, salt, and pepper.
  • Serve hot, garnished with additional coconut milk or fresh herbs, as desired.

Notes

Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Reheat gently over low heat.
