Instructions
Preparation Steps
Heat olive oil in a large pot over medium heat. Add chopped onion and sauté until translucent, about 5 minutes.
Add sliced carrots, rinsed lentils, vegetable broth, and ground cumin to the pot. Stir well to combine.
Bring the mixture to a boil. Reduce heat to a simmer, cover, and cook for 20-25 minutes, or until carrots and lentils are tender.
Remove from heat and blend the soup using an immersion blender until smooth. Stir in coconut milk, salt, and pepper.
Serve hot, garnished with additional coconut milk or fresh herbs, as desired.
Notes
Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Reheat gently over low heat.
