Instructions
Preparation Steps
In a large pot, melt the butter over medium heat.
Add broccoli and cauliflower florets to the pot. Cook for 5 minutes, stirring occasionally.
Pour in chicken broth and bring to a boil. Reduce heat and let simmer for 15 minutes until vegetables are tender.
Stir in heavy cream and shredded cheddar cheese. Stir until the cheese is melted and the soup is creamy.
Season with salt and pepper to taste and serve hot.
Notes
This soup can be easily frozen for later use. Just reheat over a low flame before serving.
