This delicious cranberry loaf is perfect for breakfast or a snack. It is moist and packed with fresh cranberries.

  • 1.5 cups fresh cranberries halved
  • 1 cup sugar
  • 1 cup milk
  • 1 tablespoon baking powder
  • 1 teaspoon vanilla extract
  • 1 egg
  • 0.5 teaspoon salt

Preparation Steps

  • Preheat your oven to 350°F (175°C). Grease a loaf pan.
  • In a bowl, whisk together flour, sugar, baking powder, and salt.
  • In another bowl, mix milk, egg, and vanilla extract.
  • Gradually combine the wet ingredients with the dry ingredients. Fold in the cranberries.
  • Pour the batter into the prepared loaf pan.
  • Bake for 60 minutes or until a toothpick inserted into the center comes out clean.
