Heat a large skillet over medium-high heat. Add the ground pork and cook, breaking it up with a spoon, until browned and cooked through, about 6–8 minutes.
Add the onion, water chestnuts, mushrooms (if using), garlic, and ginger to the skillet. Cook for another 3–4 minutes, stirring occasionally, until vegetables are softened.
Stir in the soy sauce, hoisin sauce, oyster sauce, sesame oil, and sugar. Season with salt and pepper to taste. Cook for 1–2 more minutes until everything is well combined and heated through.
Remove from heat and let the mixture cool slightly before serving.
Serve the filling in crisp lettuce cups, optionally over a bed of cooked rice or noodles.
