Coconut Chicken

A delicious and easy coconut chicken recipe. Perfect for a weeknight dinner!

  • 1.5 lbs Chicken breasts
  • 1 cup Coconut milk
  • 0.5 cup Chicken broth
  • 1 tbsp Soy sauce
  • 1 tbsp Brown sugar

Preparation Steps

  • Cut chicken into bite-sized pieces.
  • In a large skillet, brown chicken over medium-high heat.
  • Add coconut milk, chicken broth, soy sauce, and brown sugar. Bring to a simmer.
  • Reduce heat and simmer for 20-25 minutes, or until chicken is cooked through.

Notes

Serve over rice or noodles. Garnish with chopped green onions.
