  • 1 teaspoon baking soda
  • 0.5 teaspoon salt
  • 3 large ripe bananas mashed
  • 0.75 cup maple syrup or honey
  • 0.25 cup coconut oil melted
  • 1 teaspoon vanilla extract
  • 0.5 cup chopped walnuts optional

Preparation Steps

  • Preheat your oven to 350°F (175°C) and line a muffin tray with cupcake liners.
  • In a large bowl, whisk together the flour, cocoa powder, baking soda, and salt.
  • In another bowl, mix the mashed bananas, maple syrup, coconut oil, and vanilla extract until well combined.
  • Gradually add the wet ingredients to the dry ingredients, stirring until just combined. Do not overmix.
  • Fold in the chopped walnuts, if using.
  • Divide the batter evenly among the prepared muffin cups, filling each about two-thirds full.
  • Bake for 18-20 minutes or until a toothpick inserted into the center of a muffin comes out clean.
  • Allow the muffins to cool in the pan for 5 minutes before transferring to a wire rack to cool completely.

Notes
