Make the pie crust by combining flour and salt. Cut in the cold butter until the mixture resembles coarse crumbs. Add ice water, a tablespoon at a time, until the dough comes together. Roll out the dough and press into a 9-inch pie plate.
In a bowl, whisk together the eggs, heavy cream, salt, and pepper. Pour into the pie crust. Top with cheese.
Bake for 45 minutes, or until the quiche is set and lightly golden brown.
