Classic Quiche Recipe

A classic quiche recipe with a flaky crust and a creamy egg custard filling. Perfect for brunch or a light dinner.

  • 1 cup all-purpose flour
  • 0.5 teaspoon salt
  • 0.5 cup cold unsalted butter cubed
  • 4 large eggs
  • 1 cup heavy cream
  • 0.5 teaspoon black pepper
  • 1 cup shredded cheese cheddar, Gruyere, or Swiss

Preparation Steps

  • Preheat oven to 375°F (190°C).
  • Make the pie crust by combining flour and salt. Cut in the cold butter until the mixture resembles coarse crumbs. Add ice water, a tablespoon at a time, until the dough comes together. Roll out the dough and press into a 9-inch pie plate.
  • In a bowl, whisk together the eggs, heavy cream, salt, and pepper. Pour into the pie crust. Top with cheese.
  • Bake for 45 minutes, or until the quiche is set and lightly golden brown.

Notes

Serve warm or at room temperature. Can be made ahead of time and reheated.
