A warm, comforting dessert featuring sweet peaches baked in a golden, buttery biscuit-like topping. Perfect for summer or any time you crave a classic American dessert.
Preheat the oven to 375°F (190°C). Grease a 9x13-inch baking dish.
In a large bowl, combine sliced peaches, granulated sugar, brown sugar, lemon juice, cinnamon, and 1/4 teaspoon salt. Stir gently and let sit while preparing the batter.
In a separate bowl, whisk together 1 cup flour, 1/2 cup sugar, baking powder, and 1/4 teaspoon salt. In another bowl, beat the egg, then add milk and vanilla. Pour wet ingredients into dry and stir until just combined.
Pour half of the batter evenly over the bottom of the prepared baking dish. Spoon the peach mixture on top, then drizzle with melted butter and sprinkle with 1/4 cup flour.
Drop spoonfuls of the remaining batter over the peaches, spreading gently if needed. Dot with small pieces of butter.
Bake for 40–45 minutes, or until the top is golden brown and a toothpick inserted comes out clean.
Let cool slightly before serving. Serve warm, optionally with vanilla ice cream.
