Preparation Steps
Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.
In a medium bowl, cream together the softened butter and sugar until light and fluffy.
Beat in the egg yolk and vanilla extract until well combined.
Gradually mix in the flour and salt until a soft dough forms.
Roll the dough into small balls (about 1 tablespoon each) and place them on the prepared baking sheet, spacing them about 2 inches apart.
Gently flatten each ball with the bottom of a fork or your thumb to form a cookie.
Bake for 10–12 minutes, or until the edges are lightly golden. Allow to cool on the baking sheet for 5 minutes before transferring to a wire rack.
Notes
Store in an airtight container at room temperature for up to one week.
