Classic Blueberry Muffins: A Morning Delight

  • 2 cups all-purpose flour plus more for dusting
  • 1 cup granulated sugar use white or brown sugar
  • 2 teaspoons baking powder ensure it is fresh for best results
  • 0.5 teaspoon salt fine salt
  • 0.5 cup unsalted butter melted and cooled
  • 2 large eggs room temperature
  • 1 cup buttermilk shake well before using
  • 1.5 cups fresh blueberries washed and dried

Preparation Steps

  • Preheat the oven: Position a rack in the center of the oven and preheat to 375°F (190°C). Line a muffin tin with paper liners.
  • Mix dry ingredients: In a large bowl, whisk together flour, sugar, baking powder, and salt until well combined.
  • Blend wet ingredients: In another bowl, whisk together melted butter, eggs, and buttermilk until smooth.
  • Combine: Pour the wet ingredients into the dry ingredients and gently stir with a spatula until just incorporated. Avoid overmixing.
  • Fold in blueberries: Carefully fold in the blueberries, being careful not to crush them.
  • Fill muffin cups: Spoon the batter into the prepared muffin cups, filling them about 3/4 full.
  • Bake and cool: Bake for 20-25 minutes or until the muffins are golden brown and a toothpick inserted into the center comes out clean. Cool in the pan for 5 minutes, then transfer to a wire rack.

Notes

For extra flavor, add a teaspoon of vanilla extract to the wet ingredients or sprinkle some coarse sugar on top before baking for a crunchy finish.
